Try this recipe: Parsnips and Carrots en Papillote
En papillote is French for “in parchment,” and essentially means baking these aromatic veggies in an envelope. The paper seals in all that flavor, allowing the carrots and parsnips to simmer in their own juices. Look for unbleached parchment, which is not treated with chlorine.
